15 Minute Jerk Chicken & Coconut Rice

In a hot pan add a little oil, the chicken and seasoning. Stir often and cook for 10-12 minute, or until cooked through. In the meantime add the coconut rice, black beans, peas &sweetcorn to a hot pan and stir regularly for 10 – 12 minutes.
Serve immediately or store some for another time. This recipe creates 3 portions
