Chocolate Oat Cookie


  • 100g Oats
  • 1 Tbsp Chia Seeds
  • 1 Tbsp Milled Flaxseed
  • 1 Tbsp Peanut Butter
  • 2 Tbsp Mixed Seeds
  • 1 Tbsp Raisins
  • 100g Dark Chocolate


First mix the chia and flaxseed with 4 tbsp water and leave to soak for 10 minutes. Warm the peanut butter in a microwave for approx. 20-30 seconds to soften. Once the chia has absorbed the water add all the ingredients together except for the chocolate. Split the mixture into 6 and form into cookie shapes on a tin lined with greaseproof paper. Pop the cookies into a pre-heated oven at approx. 200 degrees and cook for 12-15 minutes.

Once the cookies are cooked, remove and allow to cool. Melt the Dark Chocolate. spoon over the cookies and try to wait until the chocolate has set.

Enjoy 1 cookie as a serving.
