Creamy Tomato Soup with Chilli Chicken Topper


  • 2 tins chopped tomatoes
  • 2 cartons Passata
  • 1 diced frozen onion
  • 1 tin cannelini beans
  • 2 tbsp balsamic vinegar
  • 1 veg stock cube
  • 1 tsp basil
  • 1 tsp sugar/truvia
  • Salt & pepper


Add the onions and seasoning (I used about a tablespoon of cracked black pepper & a pinch of salt) to a hot pan and soften the onions for 2 minutes. Next, add all the ingredients together and cook on a medium heat for 15-20 minutes. Blitz to your desired consistency (I use a hand blender).

This makes 4 portions. Serve with a cooked chicken breast topper, salmon fillet or vegetarian alternative.
