Fiery Carrot & Ginger Soup

Ingredients

  • 500g Frozen sliced carrots
  • 1/2 Frozen diced onion
  • 1 tin cannellini beans
  • 2 tbsp crushed ginger
  • 1 tsp nutmeg
  • 1 vegetable stock cube
  • Salt & pepper
  • Water

Method:

Add all the ingredients to a hot pan. Cover with water until all ingredients are 1-2 cm under water.
Bring to the boil and simmer for 15-20minutes. Blitz until smooth or to desired consistency. If you need to add more water, top up as much as you need.
Serves 4.

Enjoy with a chicken topper or salmon/mackerel/beef/quorn or tofu to increase protein and keep you fuller for longer
