SLOWCOOKER MEXICAN SHREDDED CHICKEN STEW

Ingredients

  • 650g mini chicken fillets/3-4 chicken breasts
  • 1/2 diced onion
  • Diced red pepper
  • 1 tin kidney beans
  • 1 tin sweetcorn
  • 1 tin (equivalent) soya beans or peas
  • 2 tins of chopped tomatoes
  • Handful of sliced jalapeño peppers
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1 tsp oregano
  • Salt & pepper

Method:

Add all the ingredients to your Slowcooker, putting your chicken on top so you can
shred it later. Cook on a low setting for 5-7 hours. This makes 4/5 servings.
