THAI SPICED CARROT & LENTIL SOUP

Ingredients

  • 500g frozen sliced carrots
  • 1/2 diced frown onion
  • 350g frozen cauliflower
  • 250g red lentils
  • 2 tbsp Red Thai Curry paste
  • Salt & pepper to taste

Method:

Add all the ingredients to a hot pan. Cover with boiled water, bring to the boil then simmer for 15-20 minutes. As the lentils thicken the soup you may need to add more water to suit. Once cooked, blitz with a hand blender.
 
Serve with a topper like chicken/salmon/tofu.
 
This makes 4 portions.
