Triple Green Soup With Peppered Mackerel


  • 1/2 frozen diced onion
  • 1/2 pack frozen broccoli
  • 1/2 pack or 500g frozen peas
  • 1 pack frozen or fresh baby spinach
  • 1 vegetable stock cube
  • Salt & pepper
  • Boiled water


Add all the ingredients minus the spinach to a large pan. Bring to the boil then cook on a medium heat for 12-15 minutes. Add the spinach to the pan and cook for a further 3-5 minutes. Once cooked, blitz to your desired consistency with a processor or hand blender.

Top with a tin of peppered mackerel.

You can swap the mackerel for any topping I’d your choice. You may prefer a chopped chicken breast, cooked turkey, diced beef, salmon, cubed tofu or any other choice of protein that you like.
